If you are bored of regular burgers and looking to try something innovative, light, and irresistibly crispy, this Crispy Sooji Burger is a must-try! Using sooji (semolina) as the star ingredient, this recipe creates a crunchy, flavorful burger patty without the need for deep frying. It’s perfect for tea-time snacks, kids’ lunchboxes, or a creative weekend treat.

Ingredients
For Sooji Patty:

  • 1 cup Sooji (Semolina / Rava) – fine variety
  • 2 cups Water
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds (Jeera)
  • 1-2 Green Chilies (finely chopped, optional)
  • 1 inch Ginger (grated)
  • 1 small Carrot (grated)
  • ¼ cup Capsicum (finely chopped)
  • ¼ cup Coriander Leaves (finely chopped)
  • ½ tsp Black Pepper Powder
  • Salt to taste

For Burger Assembly:

  • 4 Burger Buns
  • 2-3 tbsp Butter (for toasting buns)
  • 4 tbsp Mayonnaise / Cheese Spread / Green Chutney (as per preference)
  • 1 Onion (sliced into rings)
  • 1 Tomato (sliced)
  • 4 Lettuce Leaves or Cabbage Leaves
Instructions
Step 1: Prepare the Sooji Mixture
  • Heat 2 tbsp oil in a pan. Add cumin seeds, then sauté ginger and green chilies for a few seconds.
  • Add carrot, capsicum, and a pinch of salt. Sauté lightly for 2-3 minutes until the vegetables soften slightly.
  • Add 2 cups of water and bring it to a gentle boil.
  • Lower the flame, gradually add sooji while stirring continuously to prevent lumps.
  • Stir and cook until the mixture thickens and leaves the sides of the pan, similar to making upma.
  • Season with black pepper, adjust salt, and mix in coriander leaves.
  • Allow the mixture to cool slightly, then divide into equal portions and shape into round burger patties.
Step 2: Cook the Sooji Patties
  • Heat a non-stick pan or tawa with a little oil.
  • Place the prepared sooji patties and cook on medium flame until golden and crispy on both sides.
  • Flip carefully to ensure even crispness without breaking.
Step 3: Assemble the Burger
  • Slice the burger buns and lightly toast them with butter until golden.
  • Spread mayonnaise, cheese spread, or green chutney on the lower bun.
  • Place a lettuce leaf, then add the crispy sooji patty.
  • Top with onion rings, tomato slices, and another layer of spread if desired.
  • Cover with the top bun.
