Ingredients for Crispy Maida Samosa:

For the Outer Cover:

  • 2 cups Maida (refined wheat flour)
  • 4 tbsp oil or ghee (for moyan)
  • Salt to taste
  • Water (as required for kneading)

For the Filling:

  • 3-4 boiled potatoes (crumbled)
  • ½ cup boiled green peas
  • 1-2 chopped green chilies
  • 1 tsp grated ginger
  • 1 tsp cumin seeds
  • 1 tsp garam masala 1 tsp amchur (dry mango powder)
  • 1 tsp coriander powder Salt to taste
  • Fresh coriander leaves
  • Oil for frying

How to Make Crispy Maida Samosa:

Step 1: Prepare the Dough

  • In a mixing bowl, combine maida, salt, and oil/ghee. Mix well until the mixture resembles breadcrumbs.
  • Gradually add water and knead into a stiff, smooth dough. Cover and let it rest for 20-30 minutes.

Step 2: Prepare the Filling Heat oil in a pan.

  • Add cumin seeds, green chilies, and ginger. Sauté briefly.
  • Add boiled potatoes, peas, and spices.
  • Mix well and cook for 2-3 minutes. Finish with fresh coriander and allow the filling to cool.

Step 3: Assemble the Samosas

  • Divide the dough into small balls. Roll each into a thin oval or round. Cut in half. Form a cone with one half, fill it with the prepared mixture, and seal the edges firmly.
  • Repeat with the remaining dough and filling.

Step 4: Fry the Samosas Heat oil on medium flame.

  • Fry the samosas on low-medium heat until golden and crispy.
  • Drain on paper towels to remove excess oil.
